How to make special Tofu fillings for MOMO/Dumpling

If you are a vegan or a vegetarian you are going to love this recipe for (which is the Tibeto-Nepalese name for dumplings). If you love dumplings and wanna try something which has a chewy texture and a juicy bite, then give this recipe a go.

Ingredients: 60 pieces

For the filing mix:

  1. 300g Firm or semi Firm tofu drained and minced
  2. 200g Butter (or vegan butter)
  3. 100 g grated or finely chopped cabbage, salted and drained*
  4. 100g finely chopped leek/spinach/green onion leaves
  5. 2 whole finely chopped onions
  6. 3-4 tbs Ginger garlic paste
  7. 1tbs cumin powder
  8. 1tbs coriander powder
  9. 1teaspoon turmeric powder
  10. 1 tbs red chilli powder or flakes
  11. MOMO wrappers (homemade or store bought)

  1. In a pan, fry onions until golden then add stir fry the minced tofu in butter for 5 minutes at medium to low heat
  2. Add 2-3 tbs of soy sauce and fry for about 20 minutes in low heat. Stir in between to not let it stick to the bottom of the pan
  3. Then add 2tbs ginger-garlic paste, and the powdered spices and cook for about 2-3 minutes before turning of the heat
  4. let it for a while
  5. Once the tofu cools down, add grated or diced cabbage, leek/spinach/green onions, remaining ginger-garlic paste and remaining butter and mix properly
  6. Your filling is ready to be used in the momo/dumplings
